Generally speaking, the wider the kayak and the flatter the bottom, the more stability you will have. Keep in mind stability usually is a trade off for speed and tracking.
There are several sit on top models which are specificly designed for kayak fishing. Here’s a few from Ocean Kayak

There are other brands of sit on tops that make similar models too, check out a store like Sportsman’s Warehouse or Cabela’s if you have them.
